Icelandic Scones (Skonsur)

Skonsur, Icelandic scones are actually thick griddle cakes. They are delicious served right out of the pan, spread with butter and filled with thin-sliced turkey and baby greens.

  • 2 cups all-purpose flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1⁄2 tsp. baking soda
  • 1 tsp. salt
  • 2 eggs
  • 2 cups milk
  • 3 Tbsp. butter


  • In a large bowl, whisk together the dry ingredients. Beat the eggs into the milk, then pour into the dry ingredients and stir until incorporated.
  • In a medium skillet over low heat, melt half a tablespoon of butter per scone. Working one scone at a time, ladle enough batter to cover the bottom of the skillet. Cook until the skonsur develop open bubbles across the top. Flip and cook for 2 more minutes.
