Indian Cooked Milk (Khoya)
Khoya is used to make many Indian sweets.

Makes: ½ cup
- 4 cups whole milk
- In a heavy-bottomed pan, bring the milk to a boil, stirring constantly. As the quantity of milk starts to reduce, scrape any dried milk off the sides of the pan. Continue to cook until it reduces to the consistency of mashed potatoes.
- Remove from heat and let cool. Transfer to a heat-resistant container. Store covered in the refrigerator for up to a week.
