Instant Saffron Ice Cream (Kesari Kulfi)

Traditionally the milk is simmered for hours to create a rich, caramelized flavor in the kulfi. For this quick version, stir the ingredients together, pour into a freezer-proof container, and chill overnight in the freezer.

  • 2 cans or cartons (8 oz.) table cream
  • 1 can (12 oz.) evaporated milk
  • 1 can (14 oz.) sweetened condensed milk
  • 1⁄2 tsp. crushed saffron


  • Combine all the ingredients in a bowl and mix well. Pour into a freezer-proof container. Cover and freeze overnight.
