Irish Brown Bread

- 1 Tbsp. butter
- 2 cups, plus 2 Tbsp. stone-ground whole-wheat flour
- 1 cup fine white pastry flour
- 1 tsp. baking soda
- ½ tsp. sea salt
- 1½ cups buttermilk
- 1 tsp. milk
- Preheat oven to 350°F. Grease and flour 1 9" x 5" bread pan with 1 tablespoon of butter and 2 tablespoons of flour.
- Combine dry ingredients in a large bowl and whisk thoroughly to combine, breaking up lumps. Add the buttermilk in a steady stream while stirring with a wooden spoon. Stir until just combined, then spoon into the prepared cake pan. Brush the top with milk and bake for 55 minutes or until a toothpick inserted in the center comes out clean.
