Italian Minestrone

Serve this Italian-style vegetable soup with antipasto dishes and bread for a light supper or as part of a tapas selection.

Ingredients

  • ½ cup chopped onion
  • ½ cup chopped carrots
  • ¼ cup chopped celery
  • 2 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 32 oz. chicken broth
  • 1 cup chopped, peeled tomatoes
  • 1 cup cooked white beans
  • ½ cup small pasta
  • 1 tsp. salt
  • ½ tsp. ground black pepper

Directions

  • In a large saucepan or Dutch oven over medium-high heat, sauté onions, carrots, and celery in the olive oil 15 minutes. Add garlic and sauté 30 seconds.
  • Add chicken broth, tomatoes, and white beans and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes. Add the pasta and simmer 15 minutes longer, then season with salt and pepper.
  • Serve hot.
