Jicama, Mango, and Red Pepper Salad

Carrots or cucumbers can be used for this recipe, and green apples make an excellent substitute for mangoes if necessary.

Ingredients

  • 2 cups julienned mango
  • 1 small jicama, peeled and julienned
  • 1 small red bell pepper, seeded and julienned
  • 2 Tbsp. chopped scallions
  • 2 Tbsp. roasted peanuts
  • 3 Tbsp. lime juice
  • 3 Tbsp. fish sauce
  • 2 minced Thai chilies
  • 1 tsp. sugar

Directions

  • Arrange mango, jicama, bell pepper, scallions, and peanuts on a serving platter. In a small bowl, whisk together lime juice, fish sauce, chilies, and sugar. Pour over salad and toss to coat.
