Jicama, Mango, and Red Pepper Salad
Carrots or cucumbers can be used for this recipe, and green apples make an excellent substitute for mangoes if necessary.

- 2 cups julienned mango
- 1 small jicama, peeled and julienned
- 1 small red bell pepper, seeded and julienned
- 2 Tbsp. chopped scallions
- 2 Tbsp. roasted peanuts
- 3 Tbsp. lime juice
- 3 Tbsp. fish sauce
- 2 minced Thai chilies
- 1 tsp. sugar
- Arrange mango, jicama, bell pepper, scallions, and peanuts on a serving platter. In a small bowl, whisk together lime juice, fish sauce, chilies, and sugar. Pour over salad and toss to coat.
