Kansas City-Style Barbecue Sauce

Because this recipe uses a lot of acidic tomato sauce, use a well-seasoned or enameled Dutch oven.

Ingredients

  • 1 large yellow onion, peeled and chopped
  • 4 garlic cloves, peeled and minced
  • 1 tsp. salt
  • 2 Tbsp. vegetable oil
  • 1 can (26 oz.) tomato sauce
  • 1 can (6 oz.) tomato paste
  • ¼ cup dark molasses
  • 1 cup mango juice
  • 3 Tbsp. cocoa powder
  • 1 can dark beer
  • 1 can cola
  • 2 Tbsp. Worcestershire sauce
  • ⅛ tsp. ground cayenne pepper
  • ¼ cup cider vinegar
  • 1 Tbsp. ground cumin
  • 1 Tbsp. ground paprika
  • 1 Tbsp. ground coriander
  • 1 Tbsp. dried oregano
  • 1 Tbsp. dried mustard powder
  • 1 tsp. ground black pepper
  • 1 tsp. ground cinnamon

Directions

  • Place a Dutch oven over medium-high heat and when it is heated, add the onion, garlic, salt, and oil. Stir frequently and cook for 5 minutes until the onions are translucent. Turn the heat to low and cook for 15 minutes. Stir occasionally. When the onions start to caramelize and turn a light brown, add the remaining ingredients, stirring after every few items are added. Once everything is incorporated, cover with a lid and cook for 30 minutes. Stir occasionally to prevent from burning.
  • Remove the lid and simmer for 1½ hours. Some of the liquid will evaporate to create a thicker sauce.
