Keto Caprese Sandwiches
With the addition of a delicious keto-friendly bread stand-in, Caprese salad is transformed into a more filling meal that you can enjoy at home or on the go.

- 2 tablespoons mayonnaise
- 1 teaspoon balsamic vinegar
- 8 Simple Truth™ Garlic Herb Puff Bunz, thawed
- 8 ounces fresh mozzarella, sliced
- 2 vine-on tomatoes, sliced
- 8 Simple Truth Organic Basil
- Ground pepper
- In small bowl, stir together mayonnaise and vinegar.
- Spread mayo mixture on 4 Bunz. Layer each with slices of mozzarella, tomato and basil leaves. Sprinkle with salt and pepper. Top with remaining Bunz.
- Refrigerate leftovers.
