Kohlrabi with Lemon
Kohlrabi is a very sweet and delicious vegetable. It’s available in the fall and winter. It tastes delicious sprinkled with grated Parmesan cheese and run under the broiler.

- 1 lb. kohlrabi, stems removed, peeled, and shredded
- ½ cup chicken broth
- 1 Tbsp. lemon juice
- ½ tsp. salt
- ½ tsp. ground black pepper
- ½ cup chopped fresh parsley
- Place the kohlrabi in a saucepan. Add the broth, lemon juice, salt, and pepper. Simmer over low heat for 15 minutes. Sprinkle with parsley. Serve hot.
