Lamb Kabobs with Tzatziki Dip

Ingredients
- 1 pound ground lamb
- 2 green onions, finely chopped
- 2 teaspoons onion powder
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 zucchini, sliced
- 1 onion, cut into 1” pieces
- 1 yellow squash, sliced
- 1 cup tzatziki dip
Directions
- Heat grill to high heat.
- In medium bowl, combine ground lamb, green onions, onion powder, oregano, garlic powder, ground cumin, salt and pepper. Form the meat into 16 equal balls.
- Place one meatball around the bottom of eight 12” metal skewers. Thread each skewer with a slice of zucchini, onion and yellow squash.
- Grill the kabobs until charred on the outside, about 3-5 minutes on each side.
- Serve with tzatziki dip.
