Lamb Kabobs with Tzatziki Dip

Ingredients

  • 1 pound ground lamb
  • 2 green onions, finely chopped
  • 2 teaspoons onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1⁄2 teaspoon ground cumin
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon pepper
  • 1 zucchini, sliced
  • 1 onion, cut into 1” pieces
  • 1 yellow squash, sliced
  • 1 cup tzatziki dip

Directions

  • Heat grill to high heat.
  • In medium bowl, combine ground lamb, green onions, onion powder, oregano, garlic powder, ground cumin, salt and pepper. Form the meat into 16 equal balls.
  • Place one meatball around the bottom of eight 12” metal skewers. Thread each skewer with a slice of zucchini, onion and yellow squash.
  • Grill the kabobs until charred on the outside, about 3-5 minutes on each side.
  • Serve with tzatziki dip.
