Try stuffing this sausage mixture into thinly sliced and lightly steamed squash, and bake with your favorite sauce.

- 2 lbs. ground lamb
- 1⁄4 lb. ground pork fat
- 1⁄4 tsp salt
- 1⁄4 tsp. ground black pepper
- 10 sausage casings
- 1 Tbsp. olive oil
- Mix together all the ingredients except the casings and oil in a chilled bowl with chilled utensils. If using an electric mixer, be sure not to over blend meat and fat.
- Stuff the mixture into casings.
- Heat oil to medium temperature in a large sauté pan. Add the sausage, cover, and cook for about 30 minutes, turning every 5 minutes or so. Uncover and cook for 15 minutes, until thoroughly browned. Drain on paper towels.
