Ingredients

  • 4 cups sliced leeks
  • 4 russet potatoes, peeled and cubed
  • 2 carrots, diced
  • 5 cups water
  • ¼ tsp. salt
  • ½ tsp. ground black pepper

Directions

  • Place all ingredients into a 4-quart slow cooker. Cook on low for 7 hours.
  • Purée using an immersion blender or purée in batches in a blender. Serve piping hot.
