Leftover Pasta Salad

For an even more nutritious dish, steam the broccoli instead of cooking it in boiling water.

  • 1⁄2 cup water
  • 1 cup frozen broccoli
  • 1⁄2 Tbsp. olive oil
  • 3 cups cold, cooked pasta
  • 1⁄2 cup canned tuna, drained
  • 1 medium tomato, sliced
  • 1⁄4 tsp. salt
  • 2 tsp. julienned fresh basil


  • Bring the water to a boil. Cook the frozen broccoli in the boiling water for 5 minutes until the broccoli is tender. Drain.
  • Add the olive oil to the pasta and toss. Mix in the tuna. Top with the tomatoes and the broccoli. Sprinkle with salt and top with basil.
