Lemon Mint Cooler
Stir in champagne instead of ginger ale to make this punch alcoholic.

- 2 cups sugar
- 6 cups water
- 3 cups fresh mint leaves
- 1 can (12 oz.) lemonade concentrate
- 1⁄2 cup lemon juice
- 1 liter ginger ale
- In large saucepan, combine sugar and water; simmer over medium heat until sugar dissolves. Place mint leaves in large pitcher.
- Pour hot syrup over mint leaves and muddle with a spoon. Cover and chill for 3 hours.
- Strain mixture, discarding mint leaves. Add lemonade concentrate and lemon juice to mixture. Fill large glasses with ice and pour over ice, filling half way. Top with ginger ale and serve immediately.
