Lemon Pepper Chicken Cutlets
You can serve this over rice or with steamed vegetables. You might also want to add some chopped onions or garlic to this recipe.

- 4 chicken cutlets (4 oz. each)
- 1 cup lemon juice
- 1 tsp. salt
- 1 tsp. cracked black pepper
- 1 Tbsp. olive oil
- Marinate chicken breasts in lemon juice for 1 hour. Remove from lemon juice and pat dry. Season with salt and pepper.
- Heat oil in a large skillet over medium-high heat. Add chicken and cook for 4 minutes on each side, or until brown.
