Lemon Pesto Pilaf

This simple pilaf has so much flavor and a beautiful color. You can find prepared pesto in the refrigerated section of your supermarket or in the pasta sauce aisle.

  • 1 Tbsp. butter
  • 1 cup short-grain white rice
  • 2 cups chicken broth, heated
  • 2 Tbsp. lemon juice
  • 1⁄2 tsp. lemon zest
  • 1⁄4 cup prepared pesto


  • In heavy saucepan, melt butter over medium heat. Add rice; cook and stir for 3 to 4 minutes, until rice is opaque. Add heated broth; stir well and bring to a boil. Reduce heat to low, cover, and simmer for about 15–20 minutes, until rice is tender. Stir in lemon juice, zest, and pesto; remove from heat and cover; and let stand for 3–4 minutes. Fluff rice with fork and serve.
