Lemon Poppy Seed Paleo Chicken
This bright and refreshing dish is quick enough for a weeknight, but also a company favorite.

- 3 Tbsp. coconut oil
- 4 boneless, skinless chicken breasts (4 oz. each), cubed
- 3 medium lemons, juiced and zested
- 1½ cups vegetable broth
- 1 Tbsp. coconut aminos
- 1 Tbsp. tapioca starch
- 4 Tbsp. honey
- ½ tsp. poppy seeds
- ¼ cup diced green onions
- In a large skillet over medium-high heat, melt coconut oil. Add chicken, cook until golden brown, about 6 minutes per side.
- In a small bowl, whisk together lemon juice, zest, broth, aminos, tapioca, and honey. Add mixture to skillet with chicken. Turn heat to medium, cover and cook until the sauce thickens, about 10 minutes. Garnish with poppy seeds and green onions.
