Lemon Quinoa Salad

Quinoa – an ancient grain – provides protein and fiber to make this salad a filling favorite!

  • 3⁄4 cup Simple Truth Organic™ Quinoa
  • 1 1⁄2 cups water
  • 1⁄3 cup Italian parsley, roughly chopped
  • 1 cucumber, peeled and diced
  • 4 tablespoons fresh lemon juice
  • 1 tablespoon Simple Truth Organic™ Unfiltered Extra Virgin Olive Oil
  • Coarse salt, to taste
  • Freshly ground pepper, to taste


  • In a medium saucepan over high heat, combine quinoa and water. Bring to a boil, cover, reduce heat and simmer 10 to 12 minutes, until all water is absorbed. Drain and run under cold water.
  • In a medium bowl, stir in parsley, cucumber, lemon juice, olive oil, salt, pepper and quinoa; serve.
