Lemon Quinoa Salad
Quinoa – an ancient grain – provides protein and fiber to make this salad a filling favorite!

- 3⁄4 cup Simple Truth Organic™ Quinoa
- 1 1⁄2 cups water
- 1⁄3 cup Italian parsley, roughly chopped
- 1 cucumber, peeled and diced
- 4 tablespoons fresh lemon juice
- 1 tablespoon Simple Truth Organic™ Unfiltered Extra Virgin Olive Oil
- Coarse salt, to taste
- Freshly ground pepper, to taste
- In a medium saucepan over high heat, combine quinoa and water. Bring to a boil, cover, reduce heat and simmer 10 to 12 minutes, until all water is absorbed. Drain and run under cold water.
- In a medium bowl, stir in parsley, cucumber, lemon juice, olive oil, salt, pepper and quinoa; serve.
