Lemon Quinoa Veggie Salad

If you prefer to use fresh veggies, any kind will do. Steamed broccoli or fresh tomatoes would work well.

  • 4 cups vegetable broth
  • 1½ cups quinoa
  • 1 cup frozen mixed vegetables, thawed
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 1 tsp. garlic powder
  • ½ tsp. sea salt
  • ¼ tsp. ground black pepper


  • In a large pot, bring vegetable broth to a boil. Add quinoa, cover, and simmer for 15–20 minutes, stirring occasionally, until liquid is absorbed and quinoa is cooked. Add mixed veggies and stir to combine.
  • Remove from heat and combine with remaining ingredients. Serve warm or cold.
