Lemon Quinoa Veggie Salad
If you prefer to use fresh veggies, any kind will do. Steamed broccoli or fresh tomatoes would work well.

- 4 cups vegetable broth
- 1½ cups quinoa
- 1 cup frozen mixed vegetables, thawed
- ¼ cup lemon juice
- ¼ cup olive oil
- 1 tsp. garlic powder
- ½ tsp. sea salt
- ¼ tsp. ground black pepper
- In a large pot, bring vegetable broth to a boil. Add quinoa, cover, and simmer for 15–20 minutes, stirring occasionally, until liquid is absorbed and quinoa is cooked. Add mixed veggies and stir to combine.
- Remove from heat and combine with remaining ingredients. Serve warm or cold.
