Lemon-Spiked Pineapple Smoothie

You can buy fresh pineapples already trimmed at larger supermarkets. Remember to check the freshness date when using this time-saving step.

  • 1 medium ripe pineapple
  • 6 Tbsp. freshly squeezed lemon juice


  • Peel the pineapple and cut out the core. Cut the fruit into thin slices, reserving a few for garnish. Place remaining slices in food processor and process to a somewhat smooth pulpy consistency. Transfer to a large pitcher.
  • Add the lemon juice and 4 cups cold water, stirring until dissolved. Chill at least 4 hours and serve in glasses with a thin slice of pineapple for garnish.
