Light and Airy Lemon Mousse

- 1⁄4 cup whipping cream
- 2 egg whites
- 1 tsp. vanilla extract
- 1⁄4 cup confectioners sugar
- 2 Tbsp. freshly squeezed lemon juice
- 2 tsp. lemon zest
- In a medium bowl, whip cream with an electric mixer until stiff peaks form.
- In the bowl of a stand mixer, beat egg whites until stiff peaks form. Stir in vanilla, sugar, lemon juice, and lemon zest and mix until combined. Fold in whipped cream until fully incorporated. Pipe or spoon mousse into serving dishes. Refrigerate until serving.
