Lime-Ginger Sweet Potato Mash

Sweet potatoes originally come from Central and South America. They make a delectable side dish for any occasion!

Ingredients

  • 4 sweet potatoes (5" diameter), peeled and cubed
  • 2 tsp. lime juice
  • 4 tsp. butter
  • ¼ tsp. ground cumin
  • ½ tsp. dried ginger
  • ¼ tsp. chipotle powder
  • ½ cup vegetable broth

Directions

  • In a saucepan, cover the sweet potatoes with cold water and add the lime juice. Bring to a boil over medium heat, cover, and cook for 7–10 minutes, until the potatoes are fork tender. Once the sweet potatoes are fully cooked, drain the water from the pot and place them in a medium-sized bowl.
  • Melt the butter in the saucepan over medium heat. Add the cumin, ginger, and chipotle powder and sauté for 30 seconds. Add the broth and bring to a boil.
  • Pour over the cooked sweet potatoes. Mix together using a masher or wooden spoon. Serve immediately.
