If you cook the lingonberries too long, they’ll look like the tapioca in Thai bubble tea—a fun alternative to regular old applesauce!

- ½ cup water
- 2 Tbsp. lemon juice
- ½ tsp. ground cardamom
- 8 large apples (4 lbs.), peeled, cored, and sliced
- ¼ cup sugar
- 1 cup lingonberries
- In a microwave-safe bowl mix together the water, lemon juice, and cardamom. Cover and microwave at high for 5 minutes. Stir in the sugar and microwave at high for 5 more minutes. Carefully remove from the microwave.
- With a potato masher process the apple mixture until thick and chunky. Gently fold the lingonberries into the warm sauce; microwave for 1 more minute, checking and stirring at 10 second intervals to make sure lingonberries don’t burst.
- Preserve the applesauce in hot jars or refrigerate and use within 2 weeks.
