For the Love of Cucumber Salad

If the skin of the cucumber seems to be too much fiber for you, try using a potato peeler to partially skin the cucumber while still getting some of the fiber benefits.

  • 2 medium cucumbers, diced
  • 1⁄2 medium red onion, peeled and diced
  • 1⁄2 cup chopped fresh cilantro
  • 1⁄2 cup rice vinegar
  • 2 Tbsp. sugar


  • Combine all ingredients in a large bowl, mixing well. Refrigerate at least 1 hour prior to serving.
