For the Love of Cucumber Salad
If the skin of the cucumber seems to be too much fiber for you, try using a potato peeler to partially skin the cucumber while still getting some of the fiber benefits.

- 2 medium cucumbers, diced
- 1⁄2 medium red onion, peeled and diced
- 1⁄2 cup chopped fresh cilantro
- 1⁄2 cup rice vinegar
- 2 Tbsp. sugar
- Combine all ingredients in a large bowl, mixing well. Refrigerate at least 1 hour prior to serving.
