Low-Fat Peanut Butter Fudge
Three kinds of sugar give a depth of flavor and smoothness to this easy microwave peanut butter fudge.

- 1 cup brown sugar
- 1 cup granulated sugar
- ½ cup powdered sugar
- 1 cup skim milk
- ⅓ cup corn syrup
- 1 bag (10 oz.) large marshmallows
- 1½ cups peanut butter
- 2 tsp. vanilla
- Grease a 13" x 9" pan with unsalted butter and set aside. In large microwave-safe bowl, combine brown sugar, granulated sugar, powdered sugar, skim milk, and corn syrup; mix well. Microwave on high for 2 minutes, remove and stir. Rinse spoon. Microwave for 2 minutes longer, remove, and stir. Microwave for 2 minutes, then remove.
- Stir in marshmallows until melted. Add peanut butter and vanilla and mix well. Spoon into prepared pan and refrigerate until set. Cut into squares.
