Low-Fat Peanut Butter Fudge

Three kinds of sugar give a depth of flavor and smoothness to this easy microwave peanut butter fudge.

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • ½ cup powdered sugar
  • 1 cup skim milk
  • ⅓ cup corn syrup
  • 1 bag (10 oz.) large marshmallows
  • 1½ cups peanut butter
  • 2 tsp. vanilla


  • Grease a 13" x 9" pan with unsalted butter and set aside. In large microwave-safe bowl, combine brown sugar, granulated sugar, powdered sugar, skim milk, and corn syrup; mix well. Microwave on high for 2 minutes, remove and stir. Rinse spoon. Microwave for 2 minutes longer, remove, and stir. Microwave for 2 minutes, then remove.
  • Stir in marshmallows until melted. Add peanut butter and vanilla and mix well. Spoon into prepared pan and refrigerate until set. Cut into squares.
