Low-Salt Tabbouleh Salad

Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • ½ cup chopped fresh parsley
  • 2 large tomatoes, peeled and finely chopped
  • 1 large cucumber, peeled, seeded, and finely chopped
  • 2 medium carrots, peeled and shredded
  • 2 large stalks celery, diced
  • 2 Tbsp. lemon juice
  • ¼ tsp. freshly ground black pepper
  • 116 -⅛ tsp. mustard powder
  • 1 clove garlic, minced
  • ¼ tsp. celery seeds

Directions

  • Add the bulgur to a large mixing bowl and pour the boiling water over it. Cover and set aside for 30 minutes.
  • Add the remaining ingredients to the bowl and stir to combine. Cover and chill for at least 2 hours. (This gives the salad time to soak in its own juices and brings out the flavor of all the ingredients.)
