Make-Ahead Freezer Hush Puppies
No need to defrost these puppies before reheating!

- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 3 tsp. baking soda
- 1⁄2 tsp. salt
- 1 1⁄2 tsp. sugar
- 1 small onion, peeled and grated
- 1 can (15 oz.) creamed corn
- 2 large eggs
- 4 cups peanut oil
- In a mixing bowl combine the cornmeal, flour, baking soda, salt, and sugar. In a separate mixing bowl combine onion, corn, and eggs. Combine together. If the batter is too runny, add more cornmeal until it can hold its shape. Heat oil to 365°F. Drop batter into the oil by the spoonful and cook on both sides until browned. Remove from oil and place on paper towels to drain. Cool before freezing.
- Place frozen hush puppies on baking sheet and cook at 425°F for 14 to 16 minutes. Turn once after 7 minutes.
