Manchego and Fig Montaditos
Montaditos, often found on tapas menus in Spain, are small, open-face sandwiches with a delicious variety of topping combinations.

Ingredients
- 1⁄4 cup olive oil
- 1 sprig rosemary
- 1 clove garlic, smashed
- 6 oz. crusty baguette, sliced into 18 slices
- 6 oz. Manchego cheese, cut into 18 slices
- 3 tbsp. fig jam
Directions
- In a small pan, heat olive oil, rosemary and garlic until just warm. Turn off and allow to steep at least 20 minutes. Discard rosemary and garlic.
- Top each slice of baguette with a slice of Manchego cheese and a ½-teaspoon dollop of fig jam.
- Drizzle with rosemary-infused oil. Serve immediately.
- Refrigerate leftovers.
