Mango and Bell Pepper Chalaquita
This Peruvian salsa can also be made with pineapple or peaches instead of mango.

- 1⁄2 ripe mango, peeled, pitted, and diced
- 1 1⁄2 Tbsp. diced red onion
- 2 Tbsp. diced red bell pepper
- 1 Tbsp. diced rocoto pepper
- Juice and zest of 1 medium lime
- 1⁄2 Tbsp. chopped cilantro
- 3 Tbsp. olive oil
- 1⁄2 tsp. salt
- 1⁄4 tsp. ground black pepper
- Combine all the ingredients in a bowl. Serve.
