Mango and Bell Pepper Chalaquita

This Peruvian salsa can also be made with pineapple or peaches instead of mango.

Ingredients

  • 1⁄2 ripe mango, peeled, pitted, and diced
  • 1 1⁄2 Tbsp. diced red onion
  • 2 Tbsp. diced red bell pepper
  • 1 Tbsp. diced rocoto pepper
  • Juice and zest of 1 medium lime
  • 1⁄2 Tbsp. chopped cilantro
  • 3 Tbsp. olive oil
  • 1⁄2 tsp. salt
  • 1⁄4 tsp. ground black pepper

Directions

  • Combine all the ingredients in a bowl. Serve.
