Mango, Cucumber, and Red Chili Salsa
This is quick and easy. Try it with cold chicken, seafood, or grilled fish.

- 2 large ripe mangoes, peeled, seeded, and chopped
- 1 large cucumber, diced
- 1 red chili, cored, seeded, and minced
- Juice of 1 large lime
- 2 Tbsp. minced red onion
- 1 tsp. sugar
- ¼ tsp. salt
- Mix all ingredients together and let stand for 2 hours or in the fridge overnight. Serve at room temperature or cold.
