Mango, Cucumber, and Red Chili Salsa

This is quick and easy. Try it with cold chicken, seafood, or grilled fish.

Ingredients

  • 2 large ripe mangoes, peeled, seeded, and chopped
  • 1 large cucumber, diced
  • 1 red chili, cored, seeded, and minced
  • Juice of 1 large lime
  • 2 Tbsp. minced red onion
  • 1 tsp. sugar
  • ¼ tsp. salt

Directions

  • Mix all ingredients together and let stand for 2 hours or in the fridge overnight. Serve at room temperature or cold.
