Select ripe mangoes, preferably the flat yellow varieties available seasonally. These have a subtle sweet flavor that works well with fresh ginger.

- Juice of 3 limes
- 1 Tbsp. freshly grated fresh ginger
- 3 ripe mangoes, peeled and sliced
- 1 tsp. fresh lime zest
- 1 cup simple sugar syrup
- Combine the ingredients in the container of a blender and process until smooth. Chill the mixture and churn according to manufacturer’s directions. Scoop the mixture into a container and freeze.
