- ¾ cup sugar
- ⅔ cup water
- 2 Tbsp. lime juice
- 2 lbs. fresh mangos
- 1 tsp. vanilla extract
- Place the sugar and water in a small saucepan, and stir over medium heat until all of the sugar is dissolved. Allow to cool, and combine with the lime juice. Cover and refrigerate until cool.
- Peel, pit, and chop the mangos. Purée the mangos in a food processor until smooth. Combine with the chilled syrup and vanilla.
- Add to ice cream maker and follow manufacturer’s instructions for freezing.
