Makes: 8½ pints
- 6 lbs. mixed apples, peeled and chopped
- 6 cups sugar
- 1 cup maple syrup
- ½ tsp. cinnamon
- ½ tsp. ginger
- Combine all ingredients in a large nonreactive pot. Bring to a boil over medium low heat.
- Continue boiling, stirring frequently, until the jam holds its shape when put on a cold platter.
- Pour hot into hot jars, leaving ¼" headspace. Cap and process in a hot-water bath 10 minutes.
