Serves: 4

  • 2 cups all-purpose flour
  • 5 tsp. baking powder
  • 1 tsp. salt
  • 4 Tbsp. pure maple syrup, divided
  • 2 cups whole milk
  • 2 large eggs
  • 1 Tbsp. butter, melted
  • 1 1⁄2 cups corn kernels
  • 1 Tbsp. vegetable oil

  • In a large bowl, combine the flour, baking powder, and salt. Mix well.
  • Slowly add 2 tablespoons maple syrup, milk, eggs, and butter, whisking to keep it light. Fold in the corn.
  • Heat oil in a large skillet or griddle over medium heat. Drop the batter on the griddle using a ladle. Fry until little bubbles form on the tops of the cakes. Turn and fry on the reverse side until golden brown (about 2 to 4 minutes per side). Serve with remaining maple syrup.
