Maple Cakes
Serve these cakes with bacon, sausages, or ham and eggs for a great brunch.

Ingredients
- 2 cups all-purpose flour
- 5 tsp. baking powder
- 1 tsp. salt
- 4 Tbsp. pure maple syrup, divided
- 2 cups whole milk
- 2 large eggs
- 1 Tbsp. butter, melted
- 1 1⁄2 cups corn kernels
- 1 Tbsp. vegetable oil
Directions
- In a large bowl, combine the flour, baking powder, and salt. Mix well.
- Slowly add 2 tablespoons maple syrup, milk, eggs, and butter, whisking to keep it light. Fold in the corn.
- Heat oil in a large skillet or griddle over medium heat. Drop the batter on the griddle using a ladle. Fry until little bubbles form on the tops of the cakes. Turn and fry on the reverse side until golden brown (about 2 to 4 minutes per side). Serve with remaining maple syrup.
