Serve these cakes with bacon, sausages, or ham and eggs for a great brunch.

- 2 cups all-purpose flour
- 5 tsp. baking powder
- 1 tsp. salt
- 4 Tbsp. pure maple syrup, divided
- 2 cups whole milk
- 2 large eggs
- 1 Tbsp. butter, melted
- 1½ cups corn kernels
- 1 Tbsp. vegetable oil
- In a large bowl, combine the flour, baking powder, and salt. Mix well.
- Slowly add 2 tablespoons maple syrup, milk, eggs, and butter, whisking to keep it light. Fold in the corn.
- Heat oil in a large skillet or griddle over medium heat. Drop the batter on the griddle using a ladle. Fry until little bubbles form on the tops of the cakes. Turn and fry on the reverse side until golden brown (about 2–4 minutes per side). Serve with remaining maple syrup.
