Maple Ice Cream

  • 2 egg yolks
  • ¼ cup sugar
  • ⅛ tsp. salt
  • ¾ cup maple syrup
  • 1½ cups heavy cream
  • 2 egg whites, lightly beaten


  • In a bowl, beat together the egg yolks, sugar, salt, and syrup until smooth and thick. Add the cream and mix well, then add the egg whites. Beat until well blended.
  • Pour into 2 loaf pans and place in the freezer. Stir after 30 minutes and again after 1 hour to ensure a smooth mixture. Freeze for 1 hour longer, or until smooth and firm.
