Maple Pistachio Brittle
This wonderfully sweet candy has a little salt and a lot of crunch. It’s perfect for either a gift or a weeknight treat.

- 1 cup unsalted butter
- 1 cup sugar
- ¼ cup maple syrup
- ¼ cup water
- 2 cups shelled pistachios
- 1 tsp. sea salt
- Heat the butter, sugar, maple syrup, and water in a medium, heavy-bottomed saucepan over medium heat. When the mixture reads 300°F on a candy thermometer, quickly stir in the pistachios.
- Carefully pour the mixture onto a large, rimmed baking sheet. Spread out evenly with a with a wooden spoon. Season with salt.
- Let the mixture cool completely and break into pieces. Store in a cool place in an airtight container for up to 2 weeks.
