Marinated Tomatoes

Ingredients

  • 4 tomatoes, cut into 1" pieces
  • 2 green onions, sliced
  • ¼ cup chopped parsley
  • ¼ cup olive oil
  • 2 Tbsp. lemon juice
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. water
  • 1 tsp. sugar
  • 2 tsp. cracked coriander
  • 1 Tbsp. cranberry juice, optional

Directions

  • Whisk together the olive oil, lemon juice, balsamic vinegar, water, sugar, coriander, and cranberry juice. Place in a jar and shake well to blend the ingredients. If not using the marinade immediately, seal the jar and refrigerate until ready to use.
  • Pour the marinade over the tomatoes, green onions, and parsley.
