- 4 tomatoes, cut into 1" pieces
- 2 green onions, sliced
- ¼ cup chopped parsley
- ¼ cup olive oil
- 2 Tbsp. lemon juice
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. water
- 1 tsp. sugar
- 2 tsp. cracked coriander
- 1 Tbsp. cranberry juice, optional
- Whisk together the olive oil, lemon juice, balsamic vinegar, water, sugar, coriander, and cranberry juice. Place in a jar and shake well to blend the ingredients. If not using the marinade immediately, seal the jar and refrigerate until ready to use.
- Pour the marinade over the tomatoes, green onions, and parsley.
