  • ¾ cup sugar
  • 1½ tsp. light corn syrup
  • 2 oz. water
  • 6 egg whites

  • In a heavy-bottomed saucepan, stir sugar, corn syrup, and water to a boil. Bring temperature to 240°F (soft ball stage).
  • When sugar mixture reaches 220°F, begin to whip the egg whites on medium-high speed until soft peaks form. By the time you reach soft peaks, the sugar mixture should be at 240°F.
