Virtually any green works well in this recipe.

- 1 bunch chard leaves
- 1 small white onion
- ½ cup water
- 2 Tbsp. butter
- ½ cup sour cream
- 1 Tbsp. dried oregano
- 1 tsp. ground nutmeg
- 1 tsp. salt
- 1 tsp. ground black pepper
- Remove the stems from the chard and wash the leaves thoroughly. Do not dry. Remove the skin from the onion and cut into ¼" pieces.
- Put the chard and onion in a medium-sized pot on the stove on low heat. Add the water. Cook for about 15 minutes or until the chard is very limp.
- Drain off the water. Add the butter, sour cream, oregano, salt, and black pepper to the pot. Mash with a potato masher. Sprinkle with nutmeg before serving.
