Mashed Chard

Virtually any green works well in this recipe.

  • 1 bunch chard leaves
  • 1 small white onion
  • ½ cup water
  • 2 Tbsp. butter
  • ½ cup sour cream
  • 1 Tbsp. dried oregano
  • 1 tsp. ground nutmeg
  • 1 tsp. salt
  • 1 tsp. ground black pepper


  • Remove the stems from the chard and wash the leaves thoroughly. Do not dry. Remove the skin from the onion and cut into ¼" pieces.
  • Put the chard and onion in a medium-sized pot on the stove on low heat. Add the water. Cook for about 15 minutes or until the chard is very limp.
  • Drain off the water. Add the butter, sour cream, oregano, salt, and black pepper to the pot. Mash with a potato masher. Sprinkle with nutmeg before serving.
