Mashed Potato Patties

This tasty side is the perfect way to use leftover mashed potatoes.

  • 1 cup mashed potatoes
  • 1⁄2 tsp. onion powder
  • 1 large egg
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. butter


  • Mix mashed potatoes with onion powder and egg. Form into 4 to 6 patties. Dip patties in flour. Heat butter in skillet over medium-high heat. Fry potato patties in butter for 3–5 minutes per side, turning once they become browned.
  • Serve hot.
