Mashed Sweet Potatoes
Sweet potatoes have a beautiful flavor that you can brighten even more with the simple addition of cinnamon and nutmeg. This recipe uses vanilla almond milk to create a creamy texture, so there’s no need for heavy butter or cream.

- 2 large sweet potatoes
- 1 cup vanilla almond milk
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- Peel the potatoes, and slice into ½"-slices.
- Rinse the sweet potatoes and place in a pot. Cover the potatoes with water and set the pot over medium-high heat for 30 minutes or until potatoes are fork-tender.
- Remove from heat, drain, and move the potatoes to a serving dish. Mash the potatoes, and gradually add the almond milk until the desired consistency is achieved. Season with the cinnamon and nutmeg to taste, stir, and serve.
