These individually wrapped subs make a hearty lunch, and are a great solution for a quick dinner. Keep extra sauce on hand for dipping.

- 2 lbs. ground beef
- 1 cup bread or cracker crumbs
- 1⁄2 cup grated Parmesan
- 1 sprig chopped parsley
- 1 tsp. garlic salt
- 2 beaten eggs
- 4 hoagie rolls
- 2 cups mozzarella cheese
- 2 cups marinara sauce
- Combine the ground beef, breadcrumbs, Parmesan, parsley, garlic salt, and eggs. Form into balls and bake at 350°F for 30 minutes.
- Slice hoagie rolls in half lengthwise, about 1⁄3 of the way down from the top of the roll. Hollow out the bottom of the roll, leaving about 1⁄2 inch of bread. Put a layer of cheese in the bottom roll, followed by 3 meatballs, and cover with sauce. Top with more cheese. Put the top of the roll on, and wrap each sub in aluminum foil and freeze.
- Bake sub on a baking sheet at 375°F for 15 minutes, or until the internal temperature is at least 165°F.
