Meatloaf

Meatloaf can be cooked with a variety of toppings, such as ketchup, barbecue sauce, brown sugar, mustard, onions, or beef broth. Leftovers can be turned into hot or cold sandwiches.

Ingredients

  • 2⁄3 lb. ground beef
  • 1⁄3 lb. ground pork
  • 1⁄4 cup shredded carrots
  • 1⁄4 cup minced onion
  • 1⁄2 tsp. celery salt
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. ketchup
  • 1 tsp. Worcestershire sauce
  • 1 egg
  • 1 Tbsp. chopped fresh parsley
  • 1⁄4 tsp. salt
  • 1⁄8 tsp. ground black pepper
  • 1⁄4 cup oatmeal
  • 1⁄4 cup bread crumbs

Directions

  • Preheat oven to 350°F.
  • In a bowl, using your hands, combine all ingredients. Shape into a loaf and press into a loaf pan.
  • Bake until meat thermometer inserted in the center of the meatloaf reads 160°F, which should be after about 1 1⁄4 hours.
