Meaty Grilled Portobello Mushrooms
These mushrooms are wonderful warm sliced over salads, in sandwiches, and as part of an antipasto. They go well with roasted peppers and Gorgonzola cheese.

- 2 Tbsp. olive oil
- ½ tsp. salt
- 4 large portobello mushrooms (1½ lbs.)
- Heat grill to medium. Brush mushrooms with olive oil and season with salt.
- Grill well above the coals for 3 minutes, turn, and grill for 3–4 more minutes. Give larger mushrooms an extra minute or two.
