Mediterranean Turkey Cobb Salad

Ingredients

  • 8 cups baby spinach
  • 12 ounces cooked turkey breast, chopped
  • 1⁄2 cup Kalamata olives, sliced
  • 6-inch crumbled feta cheese
  • 1 can (14 oz.) artichoke hearts, drained and chopped
  • 2 Private Selection™ Mini Seedless Cucumbers, chopped
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup grape tomatoes, cut in half
  • 2 lemons
  • Olive oil, to taste
  • Salt, to taste
  • Ground black pepper, to taste

Directions

  • In four separate bowls, divide spinach evenly. Top with even amount of turkey, olives, feta cheese, artichoke hearts, cucumbers, chickpeas and tomatoes.
  • To dress, squeeze ½ lemon over each serving; drizzle with olive oil. Season with salt and pepper to taste.
