Mediterranean Turkey Cobb Salad

Ingredients
- 8 cups baby spinach
- 12 ounces cooked turkey breast, chopped
- 1⁄2 cup Kalamata olives, sliced
- 6-inch crumbled feta cheese
- 1 can (14 oz.) artichoke hearts, drained and chopped
- 2 Private Selection™ Mini Seedless Cucumbers, chopped
- 1 cup canned chickpeas, drained and rinsed
- 1 cup grape tomatoes, cut in half
- 2 lemons
- Olive oil, to taste
- Salt, to taste
- Ground black pepper, to taste
Directions
- In four separate bowls, divide spinach evenly. Top with even amount of turkey, olives, feta cheese, artichoke hearts, cucumbers, chickpeas and tomatoes.
- To dress, squeeze ½ lemon over each serving; drizzle with olive oil. Season with salt and pepper to taste.
