Melon Soup

Ingredients

  • 1 honeydew melon, peeled and seeded
  • 2 Tbsp. lime juice
  • 2 tsp. chili powder
  • 1 cup low-fat plain yogurt
  • ¼ cup fresh mint

Directions

  • Combine the ingredients in any order in the work bowl of a food processor or blender.
  • Purée until smooth.
  • Chill 1 hour or more. Whisk before serving and garnish with additional mint leaves as desired.
