Mexican Avocado Dip
Better known as guacamole, this pure and simple version of avocado dip is the best way to enjoy the avocado in all its naked glory. Stir in a little tomato salsa for more depth.

- 2 soft-ripe avocados
- 1 clove garlic, minced
- 2 firm-ripe avocados
- ¼ cup lemon juice
- 1 tsp. salt
- Cut soft-ripe avocados in half, remove seed and scoop out the flesh into a bowl. Mash with a potato masher or fork. Stir in garlic.
- Cut firm-ripe avocados in half, remove seed and scoop out the flesh, dice it and combine with lemon juice. Add to mashed avocado and mix together.
- Season with salt.
