Mexican Corn Tortillas

Tortillas are unleavened flatbreads that are made from cornmeal or flour. This recipe is the cornmeal version.

  • 1 cup cornmeal (masa harina)
  • 1⁄2 tsp. salt
  • 1⁄2 cup warm water


  • Mix the cornmeal and salt together, then add the water little by little with a wooden spoon until it becomes a stiff dough. Divide dough in half and then each half into thirds.
  • Roll each piece of dough into a ball and then flatten it to a circle, about 6 inches.
  • Heat a dry griddle or cast-iron skillet over medium-high and cook the tortillas one at a time in it. Cook for 2 minutes on the first side and then 1 minute on the second side. Serve warm.
