Mexican Fruitcake

Make an easy frosting for this cake by beating together 1/4 cup butter, 8 ounces cream cheese, 2 cups confectioners’ sugar, and 1 teaspoon vanilla. Spread it on the cake while it’s still warm.

Ingredients

  • 2 large eggs
  • 2 cups sugar
  • 2 cups self-rising flour
  • 2 tsp. baking soda
  • 1 can (20 oz.) can crushed pineapple, with juice
  • 1 cup chopped walnuts
  • 1 cup shredded coconut

Directions

  • Preheat oven to 350°F. Grease and lightly flour a 9" × 13" baking pan.
  • Mix together all the ingredients thoroughly. Pour the mixture into the pan. Bake for 40 minutes.
