Meyer Lemon Curd

Make your own lemon curd using Meyer lemons. Whisk together melted butter, eggs, sugar, and Meyer lemon juice in a saucepan and cook until smooth and thick. Spread curd onto scones, use it to make lemon bars or lemon tart, or swirl into plain yogurt.

  • 6 Tbsp. unsalted butter
  • 3 large eggs
  • 1⁄2 cup sugar
  • 2⁄3 cup Meyer lemon juice


  • In a small, heavy saucepan over low heat, melt the butter. Whisk in the remaining ingredients and cook, stirring constantly, for 8 to 10 minutes, or until it thickens.
  • Pour into a jar and let cool before refrigerating.
